Blender Pancakes
(Makes 10-12 small pancakes)
Ingredients
- 3 cups oat flour (often I will just measure 3 cups rolled oats, and give 'em a quick pulse in the food processor)
- 1 1/2 cups nut milk (try homemade almond!)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp cardamom
- 1 TBSP maple syrup
- 1 TBSP vegetable oil
- 1 egg (or flax egg if you are vegan)
- extra water in case you need to thin out a bit
- Coconut oil or ghee for cooking pancakes
Directions
- Put all ingredients in blender + blend until smooth. Add a bit of water and blend again if consistency is SUPER thick. YOU want it to be thick but still drippy
- Add a small pat of coconut oil or ghee to a large skillet over medium/high heat. Pour batter carefully onto pan (I usually cook about 3 at once)
- After about 2 minutes, when you see heat bubbles begin to rise up on the pancakes, gently flip over. Be careful not to burn pancakes - you can always turn heat down if they're smoking
- Serve with chopped fruit, hemp seeds, and maple syrup!
