Easy Oats
I deeply believe breakfast has to be quick, healthy, and delicious. This recipe is a surefire way to enjoy all three essential breakfast pieces! You can make individual servings but I prefer making a big ol' pot of this and keeping it in the fridge, reheating during the week as necessary.
Ingredients:
- At least 1 cup Rolled oats (not steel cut, but quick cooking for this recipe) - this is for about 2 servings. Adjust amount of oats (and water) as necessary
- 1 and 1/4 cups filtered water
- 1/4 cup of frozen or fresh berries (I used frozen blueberries)
- 1 TBSP of maple syrup
- Nut milk of your choice (optional)
- 1/3 cup Nut medley of your choice. I used flax seeds, walnuts and pumpkin seeds
- sprinkle of cinnamon
Directions:
- Place oats and water in small pot and bring to a boil
- Once water is boiling, turn down to low and bring to a simmer for just a few minutes (about 3-4)
- When oats are just about finished, add in fruit of your choice, and maple syrup
- take off heat and stir in additional accoutrements (almond milk, nut medley, and sprinkle of cinnamon)
- Enjoy!
