Wild Rice Salad with Greens
Ingredients
- 2 Cups uncooked organic wild rice
- 1 bunch kale, chopped
- ½ bunch chard, chopped
- 1 bunch green onions, chopped
- ½ cup parsley or basil, chopped
- ½ cup fresh lemon juice
- ½ cup olive oil
- 3 cloves garlic, minced
- 1 tsp sea salt
- 1 tsp black pepper
Directions
- In a medium pot over high heat bring 4 ½ cups of water to a boil. Add the wild rice. Bring to a boil, reduce heat to low, cover and simmer for about 60-70 minutes (or until all water is absorbed)
- When rice is almost done, in a small bowl, whisk together olive oil, lemon juice, garlic, sea salt, and pepper. Pour dressing over greens in a large (heat resistant) serving bowl. Mix well.
- Add cooked wild rice to serving bowl and mix well. Add a bit more salt (to taste) if necessary
- Serve and enjoy
